You say tomato I say tomaahto



Since it is cold and rainy at least 6 out of 7 days I like to have some soup on hand. This tomato soup is very good, especially in proportion to the amount of work required. It helps to have a parmesan rind on hand. I think one could likely just put in a small chunk of parmesan if you don't have a rind. It would also be nice to put in some sprigs of basil.


Saute about a cup of chopped onion in some olive oil in the pot you will use for soup

Add: 2 28 ounce cans of whole peeled tomatoes

1 cup water

1 parmeson rind

A few sprigs of basil

Bring to a boil and simmer for 30 to 40 minutes

Remove rind and/or basil

Puree with a hand blender or let cool and put into a food processor.


Nice as is, or you can add some cooked rice.
